Ingredients
- 1½ lbs Chicken breast
- 6 tbsp Olive oil
- 3 tbsp Lemon juice
- 4 cloves Garlic cloves
- 1 tbsp Dried oregano
- 1 tsp Salt
- ½ tsp Black pepper
- 1 medium Red onion
- 2 medium Bell peppers
- 1½ cups Long grain rice
- 3 cups Chicken broth
- 2 tbsp Butter
- ½ medium Onion
- 2 tbsp Fresh herbs (parsley/dill)
Steps
- Cut chicken breasts into 1.5-inch cubes and place in a bowl.
- Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small bowl.
- Pour marinade over chicken, toss to coat, and refrigerate for at least 15-30 minutes.
- While chicken marinates, prepare rice pilaf: melt butter in a saucepan and sauté diced onion until softened.
- Add rice to the pan and toast for 2-3 minutes, stirring frequently.
- Pour in chicken broth, bring to a boil, then reduce heat and cover. Simmer for 15-18 minutes until rice is tender.
- Cut red onion and bell peppers into chunks. Thread marinated chicken, onion, and peppers alternately onto skewers.
- Heat grill or grill pan to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Fluff rice with a fork and stir in fresh herbs.
- Serve chicken souvlaki skewers over rice pilaf with lemon wedges on the side.
