Ingredients
- 1 lb ground beef
- ½ cup diced onion
- 1 clove garlic clove, minced
- 1 packet (1 oz) taco seasoning
- 1 can (4 oz) chopped green chiles
- 2 cups green enchilada sauce
- 12 count corn tortillas
- 2 cups shredded Monterey Jack or Mexican blend cheese
Steps
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a skillet over medium heat, brown the ground beef with diced onion and minced garlic. Drain excess grease.
- Stir in the taco seasoning, chopped green chiles, and a splash of water or a few tablespoons of green enchilada sauce. Simmer for 2 minutes.
- Warm the corn tortillas in a warm skillet or microwave so they are pliable and roll easily without breaking.
- Pour a thin layer of green enchilada sauce on the bottom of the prepared baking dish.
- Spoon a portion of beef mixture and cheese into each tortilla, roll them up, and place seam-side down in the baking dish.
- Pour the remaining green enchilada sauce evenly over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake for 20-25 minutes until the sauce is hot and the cheese is melted and golden.
