Ingredients
- 2 whole chicken breasts
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes
- ¾ cup chicken broth
- ¾ cup heavy cream
- 8 oz pasta (fettuccine or penne)
- ¼ cup fresh basil
- ¼ cup parmesan cheese, grated
Steps
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Add sun-dried tomatoes and chicken broth to the skillet, scraping up any browned bits. Simmer for 2 minutes.
- Stir in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until slightly thickened.
- While sauce cooks, prepare pasta according to package directions. Drain and set aside.
- Slice cooked chicken and return to the skillet. Add fresh basil and stir gently to combine. Adjust seasoning with salt and pepper as needed.
- Divide pasta between two plates, top with chicken and sauce, and garnish with parmesan cheese. Serve immediately.
