Ingredients
- 4 pieces chicken breasts
- ½ cup all-purpose flour
- 2 pieces eggs
- 1 cup parmesan cheese, grated
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp olive oil
- 3 tbsp butter
- 4 pieces garlic cloves, minced
- 3 tbsp lemon juice
- ½ cup chicken broth
- 2 tbsp fresh parsley, chopped
Steps
- Pat chicken breasts dry and season with salt and pepper on both sides.
- Place flour in one shallow bowl. Beat eggs in another shallow bowl. Mix grated parmesan cheese with a pinch of salt and pepper in a third shallow bowl.
- Coat each chicken breast in flour, shaking off excess, then dip in egg, then coat completely in parmesan mixture.
- Heat olive oil in a large skillet over medium-high heat.
- Once oil is hot, carefully place coated chicken breasts in the skillet. Cook for 6-7 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C).
- Remove chicken from skillet and set aside on a plate.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in lemon juice and chicken broth, scraping up any browned bits from the pan. Simmer for 2-3 minutes until slightly reduced.
- Return chicken to the skillet, spooning sauce over the top. Sprinkle with fresh parsley.
- Serve immediately while hot, with extra sauce spooned over each piece of chicken.
