Ingredients
- 300 g rolled oats
- 100 g almonds, chopped
- 100 g pecans, chopped
- 50 g pumpkin seeds
- 50 g sunflower seeds
- 80 ml coconut oil, melted
- 60 ml honey
- 2 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger powder
- ½ tsp sea salt
- 75 g dried cranberries
- 75 g dried apricots, chopped
- 50 g raisins
Steps
- Preheat oven to 160°C (320°F). Line a large baking sheet with parchment paper.
- In a large bowl, combine oats, almonds, pecans, pumpkin seeds, and sunflower seeds.
- In a small bowl, whisk together melted coconut oil and honey until smooth.
- Add cinnamon, nutmeg, ginger powder, and sea salt to the oil mixture and stir well.
- Pour the wet ingredients over the dry ingredients and mix thoroughly until all oats and nuts are evenly coated.
- Spread the mixture evenly on the prepared baking sheet in a thin layer.
- Bake for 25-30 minutes, stirring occasionally (every 8-10 minutes) to ensure even toasting and prevent burning.
- Remove from oven when granola is golden brown and fragrant. Let cool completely on the baking sheet for 10 minutes (it will crisp up as it cools).
- Transfer cooled granola to a bowl and mix in dried cranberries, apricots, and raisins.
- Store in an airtight container for up to 2 weeks. Serve with yogurt, milk, or eat as a snack.
