Ingredients
- 1 cup quinoa
- 2 cups water
- 2 cups corn kernels (fresh or frozen)
- 1 whole red bell pepper
- ½ whole red onion
- 1 cup cherry tomatoes
- ¼ cup fresh cilantro
- ½ cup pineapple juice
- 3 tbsp lime juice
- 3 tbsp olive oil
- 1 tbsp honey
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Rinse quinoa under cold water. In a pot, bring 2 cups of water to a boil, add quinoa, and reduce heat to low. Simmer for 15 minutes until water is absorbed.
- Remove quinoa from heat and let it cool to room temperature, about 10 minutes.
- While quinoa cooks, prepare the vegetables: dice the red bell pepper, thinly slice the red onion, and halve the cherry tomatoes.
- If using fresh corn, cook in boiling water for 3-4 minutes, then drain. If using frozen corn, thaw completely.
- In a small bowl, whisk together pineapple juice, lime juice, olive oil, honey, salt, and pepper to create the dressing.
- In a large bowl, combine cooled quinoa, corn, bell pepper, red onion, cherry tomatoes, and fresh cilantro.
- Pour the pineapple lime dressing over the salad and toss well to combine.
- Taste and adjust seasonings as needed. Serve immediately or refrigerate until ready to serve.
